Curried Tuna Salad with California Almonds
6 ounces canned tuna in water, drained and flaked
1/2 cup red apple or pineapple, diced
1/4 cup celery, sliced
1/4 cup slivered almonds, toasted
1 tablespoon scallions, sliced
3 tablespoons unflavored yogurt
1/2-1 teaspoon curry powder
Almonds for garnish.
In a bowl, combine all ingredients, blend thoroughly. Serve in lettuce cups or sandwich between slices of whole grain bread. Sprinkle with almonds if desired.
