Italian Scallop Tortellini Bake

Marty and I don’t go out to eat that often but on special occasions, we want to have a meal that’s a little bit fancier than normal. Our wedding anniversary is coming up soon and I wanted to make something special for us for dinner without completely blowing our budget.  

This Italian Scallop Tortellini Bake is similar to a dish we had with shrimp at a local restaurant. I figured if they could make it, there was no reason that I couldn’t.

Should I use fresh or frozen seafood?

I wanted to keep this as easy as possible while still being a special meal. I don’t have time to spend two hours in the kitchen making dinner.  So, I started with frozen tortellini and frozen bay scallops.

I checked out the price of the all-natural sea scallops but they were very expensive so I decided to go with bay scallops instead. Either would work in this recipe. It just depends on your budget.

This Italian Scallop Tortellini Bake is a delicious splurge for that special meal; but, it still lets you stay within your budget.

You could easily substitute other types of seafood depending on what you have available. I think it would taste just as good with crab or you could try a shrimp tortellini bake.

You could even turn this into a sausage tortellini skillet by substituting Italian sausage.

What’s the best cheese to use with Italian scallops?

I’ve used a combination of Parmesan and mozzarella. They are my favorite Italian cheeses. But, you could try other types of cheese for a slightly different taste.

What is good to serve with scallops?

Because this dish has pasta in it, I generally opt for a vegetable side dish like this easy roasted asparagus.  Or, my Blue Lake green beans are another of my favorite side dish recipes.

Or, you can simply serve a side garden salad if you have fresh vegetables.

Best pan to use

I love baking in cast iron. But, if you don’t have cast iron, you can easily use a casserole dish. You can use any pan that’s large enough to hold the whole recipe.

Storing leftover Italian scallop tortellini bake

Just put the leftovers in a container with a tightly fitting lid and place them in the refrigerator. They will stay good for 3 to 5 days. 

This dish won’t freeze well. So, it’s best to use your leftovers up quickly.

Total Time 40 minutes

Ingredients

  • 1 bag frozen bay scallops
  • 2 pkgs frozen cheese tortellini
  • 1 jar of spaghetti sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • parmesan cheese, optional

Instructions

  1. Preheat oven to 350F
  2. Cook the tortellini according to the directions on the package.
  3. Saute the scallops in olive oil on medium heat until done. Season with salt and pepper.
  4. Mix the spaghetti sauce and the tortellini in a skillet.
  5. Add the scallops and then top with mozzarella cheese.
  6. Bake for about 20 minutes or until the cheese is melted.
