Mandarin Orange Chicken Recipe with Clementines

It’s not easy to find healthy meals that are easy and quick to prepare. In my pre-Paleo days, quick meant pizza or take out and neither of them were particularly healthy.  When we first found out Sarah was gluten intolerant, we made changes to how we ate. After I started having health issues, I switched to the Paleo diet and eliminated grains and dairy (along with other things).  While these changes have certainly made us healthier, they’ve brought along some challenges in the kitchen. I lost most of my quick meal options.

This Mandarin orange chicken recipe with clementines can be on the table in 15 minutes.  So, why make a Mandarin orange chicken recipe with clementines? It’s very easy. I try to buy local/organic fruits and vegetables whenever possible. Since there is no local citrus here in Vermont, I buy organic. Our co-op had clementines that were organic but no mandarin oranges. So I used a little bit of creativity and turned my recipe into a Mandarin orange chicken recipe with clementines. If you have organic Mandarin oranges, use those. If not, organic clementines work great too.

To keep the recipe Paleo for me, I served it without rice.  If you are not Paleo, and simply want the recipe to be gluten free (or not worried about either), you can serve it over a bed of Jasmin rice.

Ingredients
  • 1 lb chicken breasts, thinly sliced
  • 1 leek, washed well and sliced thinly
  • 1 Meyer lemon, juiced
  • 4 clementines (3 juiced, one segmented)
  • 1 cup sliced mushrooms
  • Extra virgin olive oil
Instructions
  1. Saute the chicken breasts in olive oil until done. 5 minutes.
  2. Add the leeks and mushrooms and saute 2 to 3 minutes.
  3. Add the juice and heat thoroughly.
  4. Add the segmented Clementines and heat.
  5. Serve. Serve over rice if not Paleo.

  25. I’ve never cooked chicken with mandarins before. (or an orange sauce of any kind). Wow! Looks wonderful. I’m not too familiar with Greek dishes and would probably serve it as an Asian dish over rice. Yummy! :)
