I admit to grabbing a box of cold cereal more often than not when I am pressed for time.  I know that cold cereal isn’t the best choice for the kids before school but who has time to make a hot breakfast?

But, if I don’t, I won’t’ get them out the door on time for the school bus. Of course, easy breakfast recipes can easily be used as easy dinner recipes on nights when you don’t have a lot of time.  

We do breakfast for dinner once a week or so. It’s a great way to keep your grocery budget in check.

What can I add to Paleo eggs?

One of the great things about this recipe is that you can use any leftover as an add-in.  If you have leftover peppers, onions, mushrooms, asparagus, broccoli, toss that in.  

If you have leftover bacon, sausage, or other meat, toss that in.  Finally, if you are not following the Paleo Diet, you can also add cheese.

How to make Paleo breakfast egg cups

  • Grease your muffin tins well.    I use an organic olive oil spray.  
  • Then sprinkle in a few additions based on what you have on hand.  
  • Leftover meat and vegetables work well in this recipe.

  • Break an egg into each muffin tin.  Add salt and pepper to taste.
  • Put in a preheated oven and bake for about 12 minutes.

I plan two egg cups per person unless you are feeding a 16 year old with an appetite like a line backer.  Then I plan four eggs. Adjust quantities as needed for your family.

I used local, natural turkey sausage and local cage-free eggs.  I prefer to keep the food we eat as local, natural, and/or organic as possible for health and environmental reasons.  

If I had leftover veggies or it was summer, and I had fresh veggies in the garden, I would have added some fresh spinach to it.  

If you have a non-Paleo person enjoying breakfast with you, add a side of whole-wheat toast.

Ingredients

  • 1 dozen eggs
  • leftover meat and veggies

Instructions

  1. Preheat the oven to 350F.
  2. Line a muffin tin with muffin tin liners.
  3. Spray with non stick olive oil spray
  4. Put leftover meat and veggies in the bottom of each liner.
  5. Break an egg into each liner.
  6. Bake 350F for 12 minutes.

  14. Thanks for posting this. It's so easy to overlook simple things. Fast as they are, do you think they'd freeze? I don't have a family to feed, but do love to be PREPARED for those mornings where things are too rushed to make breakfast.

    • I've never tried freezing eggs after they were cooked before so I am not sure. What I would probably do is cook the sausage ahead of time and freeze it to save time. Let me know if you try it!

  15. I've made similar creations for my kids - they call them Muggins (some combination of muffin and egg they came up with. I've always beat the eggs - I'll have to try dumping them in with whole yokes.

  25. This is so awesome. You could even easily transport them probably, huh? I love eggs like this!!! Strange question though -- I did this with my leftover hashbrown casserole and the sides of the cups had a greenish tint... is that normal? Or was my pan seeping into my eggs? lol

  28. Yum! Your little baked eggs look really good! I make these all the time, even though I don't do Paleo. I found out about them when i was doing Atkins a long time ago. I also line the muffin tin with bacon and then cook the eggs in it!

  31. That is a great way to start the day! I am a BIG fan of eggs and I love that it's contained in that shape with a little bit of meat in the mix.  I would love to try these this weekend!
