This Grilled Cilantro Vegetables in Foil recipe is one of my favorite ways to cook vegetables in the summer. One of my favorite things about summer is that we can use the grill more. That means less cleanup at the end of the day. And, since my husband is in charge of grilling in our house, it’s much less work for me.

One of the reasons I love this grilled cilantro vegetables in foil so much is that the foil makes cleanup quick and easy. Plus, when you grill vegetables in foil, you can grill smaller vegetables that might slip through the grate. So, if you’ve been wondering how to grill vegetables in foil with olive oil, check out the easy recipe below.

You can make grilled vegetables in foil or foil packet vegetables at home or while camping. All you need is a grill, vegetables, seasoning, olive oil, and fire. Personally, I feel the vegetables taste best when cooked over charcoal or wood fires rather than gas. But, if gas is what you have, it will work with that too.

What vegetables can I grill in foil?

You can use this recipe with almost any vegetables you have on hand. Simply slice the vegetables, add oil and herbs and cook. My personal favorites are zucchini, green and red peppers, mushrooms, onions, green beans, summer squash, and cherry tomatoes.

There are so many grilled summer vegetables in foil you can try that the list is endless. Now, you can grill potatoes in foil but they will need to cook longer than squash and peppers do. So, if you want to do grilled potatoes, put them in a separate pouch with onions and cook a bit longer. This recipe is an easy way to cook potatoes in foil.

You can purchase the foil packets already pre-made, which does help seal in oils and prevent messes. If you decide to make your own, you will want to use heavy-duty foil to be sure the packets don’t split when you’re cooking them.

A grill basket is another easy way to grill vegetables on the grill. If you don’t have any of those, a tin pie plate will work just as well provided it has no holes in it.

I like to make foil wraps on the grill but you most vegetable foil packets recipes can be made in the oven as well. So, just preheat the oven to 400F and cook the vegetables for about 20 minutes before testing for doneness.

We use cilantro in ours because I have so much of it in the garden. But you can really use whatever fresh herbs you have, including chives. I prefer the taste of fresh herbs, but if you want, you can use dried herbs if that’s what you have on hand.

Of course, if you’d rather not use heavy duty aluminum foil, you can use the foil pouches to make this grilled cilantro vegetables in foil recipe. Pouches are a bit neater to use because they are sealed on three edges.

The directions are the same, just add the ingredients to the foil pouch and cook following the directions. These grill bags work really well and they have a venting pouch on the top that’s handy.

These foil wrapped veggies are one of my favorite summer dishes because clean up is so easy. I hate being stuck in the kitchen during the summer and these easy grilled vegetables require just about no cleanup.

What else can I cook on the grill?

So, you may want to learn how to marinate chicken in yogurt for the grill or try my grilled Italian sweet sausages or grill a pizza to impress the kids. Now, if you want to keep the rest of the meal easy with minimal cleanup, you can opt for something as simple as hamburgers and hotdogs.

You’ll basically only need to clean the grill and a handful of silverware when you’re done with the meal. You’ll get vegetables from this recipe and the bun and protein from the hamburgers or hotdogs.

Finally, why not make s’mores when you’re done for a sweet treat the kids will love.

Grilled Cilantro Vegetables in Foil Recipe

This grilled cilantro vegetables in foil recipe is one of my favorite summer vegetable recipes.

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • Chopped vegetables of your choice
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • salt & pepper
  • fresh cilantro

Instructions

  1. Get the fire started and/or preheated.
  2. Cut large pieces of foil about 12" x 18" or use foil pie plates
  3. Mix the oil, apple cider vinegar, salt, pepper and herbs.
  4. Add the vegetables and toss to coat.
  5. Pour the vegetables into the foil and fold up the edges to seal in the oil.
  6. Place the packets seam side up on the grill and cook for about 20 minutes.
  7. To check, open one carefully watching for steam and pierce a vegetable with a knife.
