Easy Asparagus Recipes

I have seen some truly amazing asparagus dishes with fancy sauces and multiple step recipes. As much as I would love to have one of these for dinner, it isn’t likely that I’ll be preparing them in my kitchen.

I rarely have time for complicated recipes when it’s dinner time.  I want my recipes to be healthy and relatively quick to prepare.

If you find yourself with leftover asparagus, you can easily add the leftovers to a vegetable soup, toss them in a quiche or an omelet or create a cream of asparagus soup.

Creamy Asparagus Soup With Prosciutto

If you do not have prosciutto available, you can add bacon bits to the cream of asparagus soup recipe instead.  If you are looking for a vegetarian version of this recipe, you can simply not include the prosciutto at all. While I use a blender for my soup, you could also use a food processor.

How to Trim Asparagus

If you purchase asparagus from the grocery store and are wondering how to trim asparagus, let me explain. You simply hold the asparagus spear in your hand and snap it. It will snap off at exactly the correct spot.

The end of the asparagus can be woody and fibrous and not all that great to eat. You certainly can eat it, but the other end is really much more tender.

I’ve also had people ask “Do you have to peel asparagus?” No, you definitely don’t. If you want to eat more of the asparagus, you can trim the fibrous end to make it a bit more tender but it’s completely optional.

How to Boil Asparagus

Asparagus can be cooked in many different ways. If you’re wondering how to boil asparagus, you simply bring one inch of water to boil in a large skillet and drop the asparagus in, keeping it in a single layer. Then cook for 5 to 7 minutes or until tender. I find it much easier to cook asparagus in a steamer pot.

Creamy Asparagus Soup With Prosciutto

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 pound fresh asparagus tips
  • 1 medium onion, chopped finely
  • 1 medium potato, chopped finely
  • 1 tbsp butter
  • 3 cups vegetable broth
  • 1 tsp dried thyme
  • 1 cup light whipping cream
  • 1/3 cup prosciutto, fried

Instructions

  1. Remove the top 1" of the asparagus spear. Discard the tough bottom part and keep the middle.
  2. Saute onion in butter for 3 minutes.
  3. Add vegetable broth, asparagus tips and middles, potato and thyme.
  4. Cover and bring to a boil.
  5. Reduce the heat to low and simmer for 12 minutes or until vegetables are soft.
  6. Remove from heat and let cool.
  7. Remove the asparagus tips and set them aside.
  8. Place half the soup at a time in the blender. Cover and blend on high for a few seconds or until it is smooth.
  9. Add the reserved asparagus tips, cream, and fried prosciutto and heat through.

  4. Ooooh I love asparagus! I've actually been looking for a soup to make, and this one sounds perfect. Besides it has prosciutto in it! Yum!

  5. Yummy, this sounds delicious and I appreciate that it's gluten free. Sadly, no one in my little family of 4 likes asparagus but me so I normally just grill or steam it briefly. I might be able to convince them to try it since the do love prosciutto! I love to steam it lightly, then put in an ice bath to stop it from getting mushy, drain it, toss it with some cherry tomatoes, red onion and splash a little olive oil and balsamic vinegar on top. Makes a great summer salad to take to a bbq or dinner party.
