Gyro meatloaf recipe – Easy Greek recipe

I had a Gyro years ago when I was traveling and visited a Greek restaurant. I’ve never had any since then because we don’t have any Greek restaurants around me.  I’ve never come across a Greek recipe that looked like something I could accomplish easily that my whole family would enjoy. When I came across the Gyro meatloaf recipe in The Muffin Tin Cookbook: 200 Fast, Delicious Mini-Pies, Pasta Cups, Gourmet Pockets, Veggie Cakes, and More!, I knew I needed to try it. My family loves meatloaf and this seemed quite easy to make.

These were absolutely delicious.  We ate them as mini meatloaves but they could easily be broken up and eaten in a pita pocket with Greek salad for a fun lunch or light dinner.  If you’re looking for an easy Greek recipe that your family will enjoy, Gyro meatloaf is definitely it!
