We are definitely meat eaters in my home, but every now and then, we like to have meatless meals to keep our budget under control. Since beans are high in fiber, they really help fill you up which is why this makes a great meal.

Gnocchi Vegetarian Recipe

This is a super easy vegetarian meal to make.  Everything is cooked in one pan and it can be ready in about 15 minutes. If you’re running late for dinner, this is a great choice. This is the first gnocchi recipe I’ve tried and it was really easy.  I started with fresh gnocchi found in the grocery store near the fresh pasta. If you like to make your own, you could certainly do that as well.

One of the reasons that I love this gnocchi vegetarian recipe is that it is loaded with vegetables. You can make it as a side dish. But, you can also easily make it as a main dish because it has white beans for a protein option.

If you have time, you can start with fresh vegetables. But, if it’s a busy night, you can easily use canned or frozen vegetables instead. 

Tools to make this Gnocchi vegetarian recipe

Large covered skillet – You’ll want a large covered skillet to make this. I love one-pan meals because they are easy to clean up after. If you get a non-stick skillet, the cleanup process is even easier.

Gnocchi maker – If you want to make your own gnocchi recipes, you will need a gnocchi maker. I’m considering this one because it’s so easy to clean afterward. Or, buy the potato gnocchi already prepared.

If you have fresh spinach growing in the garden, you can grab a handful of baby spinach from there. Otherwise, you can pick some up at the farmer’s market or buy a bag of baby spinach at the grocery store. I prefer baby spinach in this recipe rather than full-grown because the taste is more mellow. You can go ahead and toss in some chopped mushrooms too if you like.

What is gnocchi?

Gnocchi is basically small dumplings that are made from flour, potatoes, egg, cheese, breadcrumbs, etc. There are quite a few different varieties you can find in the store. I would really love to try making my own from scratch someday when I have more time. Thankfully, I can buy them ready-made at the store when I want to make this gnocchi vegetarian recipe.

Is gnocchi better for you than pasta?

Gnocchi really isn’t better or worse than pasta. Pasta tends to have protein in it which gnocchi does not. Gnocchi is often lower in carbs. But, because they are smaller, you often eat more of them than you do of pasta.

Gnocchi Vegetarian Recipe with White Beans

Ingredients

  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 package (16 ounces) potato gnocchi
  • 1 can (15 ounces) cannellini beans, rinsed & drained
  • 6 ounces of fresh baby spinach
  • 1 can of Italian diced tomatoes, undrained (14 1/2 ounces)
  • 1/4 teaspoon pepper
  • 3 tablespoons grated Parmesan cheese
  • 1/2 cup shredded part-skim mozzarella cheese

Instructions

  1. In a large skillet, saute onion in oil until tender. Add the garlic; cook one minute longer.
  2. Add gnocchi; cook and stir for 5 or 6 minutes or until golden brown. Stir in spinach; cook until wilted.
  3. Add the beans, tomatoes, and pepper; heat through. Sprinkle with cheese, cover, and remove from heat. Let stand for 3-4 minutes or until cheese is melted.

  2. I love gnocchi, but usually pair with pesto (which my kids hate). Definitely going to try this recipe, hoping kids will like.
