Maple Blueberry Coffee Cake Recipe

Maple Blueberry Coffee Cake Recipe

This is an absolutely delicious coffee cake recipe that I recommend you try the next time you’re looking for a treat for yourself or for company.

Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 2 1/2 cups Buttermilk Pancake Mix
  • 1 cup water
  • 3/4 cup fresh blueberries
  • 1/8 cup sugar
  • 1/8 cup real maple syrup
  • 1 egg
  • 1 teaspoon vanilla

Topping:

  • 1/4 cup Buttermilk Pancake Mix
  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350F.
  2. To make the cake: In a large bowl, mix 2 1/2 cups of Buttermilk Pancake Mix, water, sugar, maple syrup, egg, vanilla and blueberries until moistened.
  3. Spoon the batter into a lightly greased square 8x8 pan.
  4. To make the topping:  In a small bowl, stir the 1/4 cup Buttermilk Pancake Mix, brown sugar and cinnamon.
  5. Cut in butter with pastry blender until crumbly.
  6. Sprinkle the topping evenly over the cake.
  7. Bake 30 minutes or until toothpick inserted in the center comes out clean & the top is golden brown.

  1. Blueberry peach coffee cake sounds amazing. I love using fresh fruit when baking, there's nothing like it!! And I'm a huge coffee cake fan also. I could eat it for breakfast daily.
