SeaPak is hosting a Most Coast Collection (#MostCoast) program on Facebook (launching the first week in March). As a busy mom, it’s difficult to find time to take a break from the craziness of everyday life.  Dinner time is one of the busiest times of my day. I am generally wrapping up work that I’ve been doing online and timing that with running out to get the kids from after school activities. By the time I get home, dinner needs to be something quick without me resorting to peanut butter sandwiches.  While I love frozen seafood, with two teenagers, often the packages are not large enough to make a meal. I just learned that SeaPak offers value sized family boxes of their Butterfly Shrimp, Popcorn Shrimp, Coconut Shrimp, Breaded Butterfly Shrimp, and Shrimp Scampi. These are 18 to 34 oz packages that are more than enough to fill your family for dinner. I received the Shrimp Scampi (my favorite) which is an 18 oz package. It was so simple to make. I just put it in the oven for 15 minutes and it was done.   That’s the perfect timing because it gave me just enough time to make the rice, set the table and get some pre-cut veggies from the refrigerator. For a meal that took twenty minutes from start to finish, this is pretty amazing.
