Raspberry and Spice Tea Muffins Recipe

My favorite way to enjoy Lipton Green Tea Superfruits is in these delicious Raspbery and Spice Tea Muffins.  Muffins are the perfect portable breakfast and when you add a cup of Lipton Green Tea Superfruits tea to a travel mug, you are all set for breakfast on the run.

  • 1 heaping tablespoon loose leaf Lipton Green Tea Superfruit Red Goji & Raspberry tea
  • 1 cup milk
  • 1 cup dried raspberries
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • zest from half a lemon

Heat the oven to 400F. Add liners to two muffin pans (12).  Boil 1/4 cup of water.  Add the heaping tablespoon of loose tea. Let them steep for three minutes.  Add the milk and simmer for about 10 minutes.  Pour more boiling water over the dried raspberries and let them soften while the tea steeps.

Mix the dry ingredients. In a separate bowl, beat the oil, brown sugar, egg, vanilla, and lemon zest.  Take the tea milk off the heat and strain. Mix the milk in with the wet ingredients. Drain all the water from the raspberries. Add them to the wet ingredients.

Pour the wet ingredients into the dry ingredients. Fold until mixed. Drop heaping teaspoonfuls into the muffin liners.  Bake 400F for 15 minutes then 325F for 10-15 minutes. Cool on rack.
