I’m part of a monthly Pinterest meme where we find a recipe from Pinterest and then attempt to make it ourselves. It’s supposed to help us improve our food photography skills. February’s theme was soups/stews so I want in search of a tasty looking Pinterest soup/stew recipe. I found this yummy looking Olive Garden Zuppa Toscana recipe and decided to give it a try. Here is the pin of the Olive Garden Zuppa Toscana that I chose:
I made a few modifications to be certain it was something that my family would actually eat.
Here’s the original Olive Garden Zuppa Toscana recipe that was first pinned on Pinterest:
Olive Garden Zuppa Toscana recipe
3 cans (14 oz) chicken broth
2 cups whipping cream
red pepper flakes (to taste)
salt and pepper (to taste)
1 small onion, diced, sauteed
1/2 pkg bacon (cooked and crumbled)
4-5 cups chopped kale
3 to 4 potatoes, scrubbed and cut into slices or small chunks (skins left on)
1 lb Johnsonville mild Italian sausage, browned and drained
Put everything into the crock pot except for the potatoes and cook on high for three to four hours. Add the potatoes one hour before it is done so they don’t get soggy.
What I changed in the above recipe:
I removed the kale since no one in the house likes it but me. I substituted some mixed veggies. If your family likes kale, you can keep as is. Here is the photograph of my Olive Garden Zuppa Toscana recipe:
I think the kale probably would have made the picture more visually interesting but the soup itself was amazing. Definitely delicious and I will be making it again. It was great for dinner and warmed up the next day for lunch. What’s your favorite kind of soup? Do you make soups in the crockpot or on the stove top?
